Fried Fish with Soy Sauce

This is a quick and simple dish to cook if you are rushing for time but still want an impressive tasty fried fish dish to serve! You can use fish with white flesh like seabass, black pomfret, tilapia or garoupa.

Ingredients
  

  • 2 medium sized sea bass, whole or cut into smaller pieces (wash, clean & pat dry).
  • 1 large onion or 10 shallots, cut into thin slices.
  • 2 fresh red chillies, cut into long strips or slit into halves.
  • 2 tbsp of chopped garlic, or more, if needed.
  • 4 tbsp root ginger, cut into thin long strips.
  • 2 tbsp cornflour, to coat the fish.
  • salt (as required)
  • black pepper (as required)
  • 2 tbsp ginger juice.
  • ½ tsp turmeric powder.

SAUCE: (combine with 1 cup water)

  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp white vinegar or rice wine vinegar
  • 2 tbsp sesame oil
  • 2 tbsp oyster sauce
  • 1 tbsp corn flour mixed with 3- 4 tablespoons of water
  • sugar (according to taste)

GARNISH

  • 2 stalks of spring onions, chopped finely.
  • 6 sprigs of coriander leaves, torn loosely.
  • 1 - 2 fresh red chillies, cut into slices or into long strips.

Instructions
 

  • If using whole fish, make 3 to 4 deep slits on both sides. Season with salt, coarse black pepper powder, turmeric and ginger juice.
  • Coat the fish with the cornflour. Leave it aside for about 20 minutes. Prepare the sauce.
  • Deep fry the fish until it is crispy and transfer to a plate. Alternatively, sprinkle some cooking oil on the fish and bake it or grill it, for a healthier version.
  • In a deep frying pan or “kuali”, add 4 tablespoons of vegetable oil. When the oil is hot, add in the sliced ginger, chopped garlic and saute.
  • Add in the onions and fresh ripe chillies and saute them until golden brown.
  • Pour in the sauces (mixed together in a bowl or individually) and allow it to simmer. When its dry, add in the fried fish to the gravy/sauce.
  • Turn the heat off.
  • Garnish and serve hot.
