Soy Sauce Chicken

Soy sauce chicken is our go-to dish and a favourite meal in our house. It's quick, delicious, and leaves you absolutely satisfied!

Ingredients
  

  • 1 medium sized chicken, deskinned and cut into small to medium pieces.
  • peanut oil or any vegetable oil, as required.
  • ¼ cup ginger, cut into long, thin slices.
  • ½ pod garlic, finely chopped.
  • 2 large onions, cut into wedges or thin slices.
  • 2 stalks of spring onions, finely sliced.
  • 6 fresh red chillies, finely sliced.
  • ½ tbsp course black pepper powder.
  • 3 large potatoes, cut each into 4 wedges.
  • ½ cup dry Shitake mushrooms (optional), soak in hot water for 30mins, wash thoroughly to remove any grit and cut into thick slices.
  • 2 tbsp honey, or as needed.
  • 1 tbsp thick black soy sauce.
  • 2 tbsp light soy sauce.
  • 1 tbsp sesame oil.
  • 2 tbsp oyster sauce (optional).

Instructions
 

  • In a deep pan ''kuali', add in the oil and saute ginger, garlic and sliced chillies.
  • When the garlic turns slight golden brown, add in the onions and fry for a minute.
  • Add in the chicken and cover with a lid to cook for about 3 minutes.
  • Then add 1 tsp salt, potatoes, fresh red chillies and mushrooms. Cook further for 5 mins on medium flame.
  • Then add in the coarse ground black pepper and all the seasonings except the very thick soy sauce.
  • Cook, covered over very low flame. DO NOT add water. (If however, the chicken is sticking to the pan, you can then add little water).
  • When the chicken and potatoes are cooked and tender, add the thick black soy sauce.
  • Then, add in the honey. Taste. you can add in more ingredients, if needed.
    When the dish has a very thick gravy and oil splitting at the sides of the pan, switch off the flame.
  • Garnish with chopped spring onions.

Notes

NB: If you like it spicier, add more fresh red chillies and coarsely ground black pepper or instead, add crush dry red chillies, for a kick!!!
